- 2 lbs pork shoulder or pork loin, cut into chunks
- 1 cup pineapple juice
- 1 can (8 oz) pineapple chunks, drained
- 1/4 cup soy sauce
- 3 tbsp brown sugar
- 3 cloves garlic, minced
- 1/2 tsp ginger, ground or fresh grated
- 1/4 tsp black pepper
- 1/2 tsp salt
- 2 tbsp cornstarch + 2 tbsp water (for thickening, optional)
- Green onions for garnish

- Place pork chunks in the slow cooker.
- In a bowl, combine pineapple juice, pineapple chunks, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
- Pour mixture over the pork and stir to coat.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until pork is tender.
- If desired, mix cornstarch and water, stir into the crockpot, and cook an additional 15–20 minutes to thicken the sauce.
- Garnish with green onions and serve over rice or noodles.
Notes
For extra flavor, sear the pork before adding to the slow cooker. You can also add bell peppers or snap peas for a colorful and nutritious twist.
