- 1½ cups corn kernels (fresh, frozen, or canned)
- ¼ cup mayonnaise or Greek yogurt
- ¼ cup crumbled cotija or feta cheese
- 1 tbsp lime juice
- ¼ tsp garlic powder
- ¼ cup chopped fresh cilantro
- Optional toppings: avocado, jalapeño slices, extra lime wedges

- Top with remaining cheese, cilantro, and optional toppings.
- Serve warm with extra lime on the side.
