  • 1/2 lb beef (brisket or stew meat), thinly sliced
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 6 cups beef or anchovy broth
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • 1 tsp gochugaru (Korean chili flakes, optional)
  • 1 cup napa cabbage, chopped
  • 1 zucchini, sliced
  • 1 cup mushrooms (shiitake or button)
  • 1 package (7 oz) soft tofu, cubed
  • 2 green onions, sliced
  • Salt and black pepper, to taste

  1. Heat sesame oil in a large pot over medium heat.
  2. Add beef and cook until lightly browned.
  3. Stir in garlic and onion; cook 1–2 minutes until fragrant.
  4. Add soy sauce, gochujang, and gochugaru. Stir to coat beef.
  5. Pour in broth and bring to a boil.
  6. Reduce heat and simmer 20–25 minutes until beef is tender.
  7. Add cabbage, zucchini, mushrooms, and tofu. Simmer 8–10 minutes.
  8. Season with salt and pepper if needed.
  9. Garnish with green onions and serve hot.

Notes

For extra depth, add a spoonful of doenjang (soybean paste). This soup tastes even better the next day and pairs perfectly with steamed rice.
