- 1/2 lb beef (brisket or stew meat), thinly sliced
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 small onion, sliced
- 6 cups beef or anchovy broth
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tsp gochugaru (Korean chili flakes, optional)
- 1 cup napa cabbage, chopped
- 1 zucchini, sliced
- 1 cup mushrooms (shiitake or button)
- 1 package (7 oz) soft tofu, cubed
- 2 green onions, sliced
- Salt and black pepper, to taste

- Heat sesame oil in a large pot over medium heat.
- Add beef and cook until lightly browned.
- Stir in garlic and onion; cook 1–2 minutes until fragrant.
- Add soy sauce, gochujang, and gochugaru. Stir to coat beef.
- Pour in broth and bring to a boil.
- Reduce heat and simmer 20–25 minutes until beef is tender.
- Add cabbage, zucchini, mushrooms, and tofu. Simmer 8–10 minutes.
- Season with salt and pepper if needed.
- Garnish with green onions and serve hot.
Notes
For extra depth, add a spoonful of doenjang (soybean paste). This soup tastes even better the next day and pairs perfectly with steamed rice.
