  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 cup beef broth
  • Optional: horseradish sauce or au jus for serving

Instructions

  1. Preheat oven to 450°F (230°C). Pat prime rib dry and rub with olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Place roast on a rack in a roasting pan, fat side up.
  3. Roast at 450°F for 15 minutes to sear, then reduce heat to 325°F (165°C) and continue roasting for 1.5–2 hours, or until internal temperature reaches desired doneness (medium-rare: 135°F / 57°C).
  4. Remove roast and tent with foil. Let rest for 20–30 minutes before slicing.
  5. Optional: Make au jus by deglazing the pan with beef broth and drippings, simmering until slightly thickened.
  6. Slice the prime rib and serve with au jus or horseradish sauce.
