  • 1 green bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. In a large pot, brown the meat over medium-high heat and drain excess fat.
  2. Add onion, garlic, and bell peppers. Sauté 4–5 minutes until softened.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release flavors.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  5. Adjust seasoning as needed. Serve hot with optional toppings like cheese, sour cream, or cilantro.

Notes

For extra depth of flavor, simmer longer or add a splash of beer. This chili is versatile and can be adapted to your taste with additional vegetables or spices.
