- 2 tbsp olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup milk (or dairy-free alternative)
- 1/2 cup shredded cheddar cheese (optional)
- Salt and black pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, season with salt and pepper, and roast for 25 minutes until golden.
- In a large pot, sauté onion and garlic until softened.
- Add roasted cauliflower and vegetable broth. Simmer for 10 minutes.
- Blend the mixture with an immersion blender until smooth and creamy.
- Stir in milk and cheese (if using). Adjust seasoning with salt and pepper.
- Serve warm, garnished with parsley or chives.
