  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup milk (or dairy-free alternative)
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, season with salt and pepper, and roast for 25 minutes until golden.
  2. In a large pot, sauté onion and garlic until softened.
  3. Add roasted cauliflower and vegetable broth. Simmer for 10 minutes.
  4. Blend the mixture with an immersion blender until smooth and creamy.
