- 1 tablespoon olive oil
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 packet taco seasoning (or 2 tbsp homemade)
- 2 cups beef broth or water
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips
Instructions
- Sauté: Heat olive oil in a large pot over medium heat. Add diced onion and cook for 2–3 minutes. Stir in garlic and ground beef, cooking until browned. Drain excess fat if needed.
- Simmer: Add beans, corn, tomatoes, tomato sauce, taco seasoning, and broth. Stir well and bring to a simmer.
- Cook: Cover and simmer for 20–25 minutes to let the flavors meld together.
- Serve: Ladle into bowls and top with shredded cheese, sour cream, avocado slices, or tortilla chips if desired.
Notes
To make it spicier, add a diced jalapeño or a pinch of cayenne pepper. This soup freezes beautifully – just cool completely and store in airtight containers for up to 3 months.
