  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped walnuts or pecans
  • 2 tbsp breadcrumbs (optional for extra crunch)
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Toss the sweet potato cubes with olive oil, paprika, salt, and pepper.
  2. Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
  3. Add the butter beans to the sheet and roast another 10 minutes until sweet potatoes are tender and beans are lightly golden.
  4. In a small bowl, mix chopped nuts and breadcrumbs. Sprinkle over roasted sweet potatoes and beans and roast 5 more minutes until crunchy.
  5. Garnish with fresh parsley or cilantro and serve warm.
