- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) butter beans, drained and rinsed
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped walnuts or pecans
- 2 tbsp breadcrumbs (optional for extra crunch)
- Fresh parsley or cilantro, for garnish
Instructions
- Preheat oven to 400Β°F (200Β°C). Toss the sweet potato cubes with olive oil, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 20 minutes.
- Add the butter beans to the sheet and roast another 10 minutes until sweet potatoes are tender and beans are lightly golden.
- In a small bowl, mix chopped nuts and breadcrumbs. Sprinkle over roasted sweet potatoes and beans and roast 5 more minutes until crunchy.
- Garnish with fresh parsley or cilantro and serve warm.
