- Pinch of sea salt
- Toppings of choice (e.g., avocado, nut butter, hummus, fried egg, berries)
Instructions
- Preheat oven to 400°F (200°C) or set toaster on high.
- Slice sweet potato lengthwise into 1/4-inch thick slices.
- Lightly brush slices with olive oil and sprinkle with sea salt, if desired.
- Arrange slices on a baking sheet and bake for 15–20 minutes, flipping halfway, until tender but firm. Alternatively, toast slices in a toaster 2–3 times until cooked through.
- Top with your favorite sweet or savory toppings and enjoy warm.
Notes
Make extra slices and store in the fridge for up to 3 days. Reheat in a toaster or oven before topping. Great as a quick breakfast or snack.
