Instructions

  1. Preheat oven to 400°F (200°C) or set toaster on high.
  2. Slice sweet potato lengthwise into 1/4-inch thick slices.
  3. Lightly brush slices with olive oil and sprinkle with sea salt, if desired.
  4. Arrange slices on a baking sheet and bake for 15–20 minutes, flipping halfway, until tender but firm. Alternatively, toast slices in a toaster 2–3 times until cooked through.
  5. Top with your favorite sweet or savory toppings and enjoy warm.

Notes

Make extra slices and store in the fridge for up to 3 days. Reheat in a toaster or oven before topping. Great as a quick breakfast or snack.
