A wholesome twist on the classic comfort dish, this Sweet Potato Shepherd’s Pie is topped with creamy mashed sweet potatoes and filled with a savory, hearty vegetable and lentil mixture. Perfect for a cozy and nourishing meal.

- 2 lbs sweet potatoes, peeled and cubed
- 2 tbsp butter or olive oil
- 1/4 cup milk (or plant-based milk)
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup mushrooms, chopped
- 1 cup cooked lentils (or ground turkey/beef if preferred)
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 cup vegetable or chicken broth
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh rosemary (or 1/2 tsp dried)
Instructions
- Preheat oven to 375°F (190°C).
- Place sweet potatoes in a pot of salted water. Boil until tender, about 15 minutes. Drain, then mash with butter, milk, salt, and pepper. Set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic and mushrooms; cook 3 more minutes.
- Add lentils, peas, tomato paste, broth, thyme, and rosemary. Simmer until mixture thickens, about 8–10 minutes. Season with salt and pepper.
- Transfer filling to a baking dish. Spread mashed sweet potatoes evenly on top.
- Bake for 20 minutes, until the top is slightly golden.
- Let cool briefly before serving.
Notes
For a richer topping, add a sprinkle of grated Parmesan or nutritional yeast to the mashed sweet potatoes. You can also substitute lentils with ground meat for a non-vegetarian version.
