- 1 large egg
- 1/4 cup unsulphured molasses
- 1/4 cup granulated sugar (for rolling)

- Cream butter & sugar: Beat butter and brown sugar until creamy. Add the egg and molasses; mix well.
- Combine: Add dry ingredients to the wet mixture and mix until a soft dough forms.
- Chill: Refrigerate dough for 1 hour to enhance softness and prevent spreading.
- Form cookies: Roll dough into balls and coat each in granulated sugar.
- Bake: Place on a lined baking sheet and bake at 350°F (175°C) for 8–10 minutes, until tops crack slightly but centers remain soft.
- Cool: Let rest on the tray for 5 minutes, then transfer to a rack.
Notes
Tip: For extra-soft cookies, remove from the oven when the centers still look slightly underbaked — they finish setting as they cool.
