  • 4 very ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup sugar
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 tsp cinnamon
  • Optional: 1/2 cup chopped walnuts or chocolate chips

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mash the bananas in a large bowl until smooth.
  3. Mix in melted butter, sugar, beaten eggs, and vanilla until combined.
  4. Sprinkle in baking soda, salt, and optional cinnamon; stir gently.
  5. Fold in flour until just combined. Add optional nuts or chocolate chips.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake 55–65 minutes or until a toothpick inserted comes out clean.
  8. Cool in pan 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for the sweetest, most moist bread. For extra moisture, you can add a tablespoon of Greek yogurt or sour cream. Banana bread tastes even better the next day.
