Ingredients

  • 4 medium zucchinis, halved lengthwise and scooped out
  • 1 lb ground beef or turkey
  • 1/2 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup tomato sauce
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Olive oil, for cooking
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Prepare zucchini: Slice zucchinis lengthwise and scoop out the center flesh. Lightly brush with olive oil and place in a baking dish.
  3. Cook filling: In a skillet over medium heat, add olive oil and sauté onion and garlic until fragrant. Add ground meat and cook until browned.
  4. Simmer: Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes until thickened.
  5. Stuff zucchini: Spoon the meat mixture into the zucchini boats. Top with mozzarella and Parmesan cheese.
  6. Bake: Bake for 20–25 minutes until the zucchini is tender and cheese is golden and bubbly.
  7. Garnish & serve: Top with fresh herbs and serve hot.
