- 4 medium zucchinis, halved lengthwise and scooped out
- 1 lb ground beef or turkey
- 1/2 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup tomato sauce
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Olive oil, for cooking
- Fresh parsley or basil, for garnish
Instructions
- Preheat oven: Preheat your oven to 375°F (190°C).
- Prepare zucchini: Slice zucchinis lengthwise and scoop out the center flesh. Lightly brush with olive oil and place in a baking dish.
- Cook filling: In a skillet over medium heat, add olive oil and sauté onion and garlic until fragrant. Add ground meat and cook until browned.
- Simmer: Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5–7 minutes until thickened.
- Stuff zucchini: Spoon the meat mixture into the zucchini boats. Top with mozzarella and Parmesan cheese.
- Bake: Bake for 20–25 minutes until the zucchini is tender and cheese is golden and bubbly.
- Garnish & serve: Top with fresh herbs and serve hot.
