- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp strawberry extract (or to taste)
- 1/4 cup finely chopped fresh strawberries or freeze-dried strawberries, crushed
- Pink food coloring (optional)
- Extra sugar for rolling

- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg, vanilla extract, and strawberry extract until combined.
- Mix in chopped or crushed strawberries and food coloring, if using.
- Gradually add dry ingredients and mix until a soft dough forms.
- Scoop dough into 1½-inch balls and roll in granulated sugar.
- Place cookies 2 inches apart on prepared baking sheets.
- Bake for 9–11 minutes, until edges are set and centers look slightly soft.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
For stronger strawberry flavor, use freeze-dried strawberries instead of fresh. Do not overbake—cookies will firm up as they cool.
