  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup finely chopped fresh strawberries
  • Optional: extra sugar for rolling or pink sanding sugar

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Add egg and vanilla to the butter mixture and beat until combined.
  5. Gently fold in the dry ingredients, then fold in chopped strawberries.
  6. Roll dough into 1-inch balls and optionally roll in sugar. Place on prepared baking sheets about 2 inches apart.
  7. Bake 10–12 minutes, or until edges are lightly golden. Centers may look slightly underbaked.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe strawberries for the best flavor. For a more uniform color, freeze the chopped strawberries briefly and drain excess juice before adding to the dough.
