- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup finely chopped fresh strawberries
- Optional: extra sugar for rolling or pink sanding sugar

- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla to the butter mixture and beat until combined.
- Gently fold in the dry ingredients, then fold in chopped strawberries.
- Roll dough into 1-inch balls and optionally roll in sugar. Place on prepared baking sheets about 2 inches apart.
- Bake 10–12 minutes, or until edges are lightly golden. Centers may look slightly underbaked.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Use very ripe strawberries for the best flavor. For a more uniform color, freeze the chopped strawberries briefly and drain excess juice before adding to the dough.
