- 1 cup fresh strawberries, chopped
- 2/3 cup heavy cream
- 1 tsp vanilla extract
- For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest

- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gently fold in the chopped strawberries.
- In a small bowl, mix heavy cream and vanilla extract, then pour into the dry ingredients. Stir until just combined.
- Turn dough onto a floured surface, shape into a 1-inch thick circle, and cut into 8 wedges.
- Place wedges on the prepared baking sheet and bake for 18–22 minutes, until golden brown.
- While scones cool, whisk together powdered sugar, lemon juice, and zest for the glaze.
- Drizzle glaze over cooled scones and serve.
Notes
For best results, keep butter cold. You can add a little extra lemon zest on top for a stronger citrus flavor. Scones are best enjoyed fresh but can be stored in an airtight container for 1–2 days.
