  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, chopped
  • 2/3 cup heavy cream
  • 1 tsp vanilla extract
  • For the Lemon Glaze:
    • 1 cup powdered sugar
    • 2 tbsp fresh lemon juice
    • 1 tsp lemon zest

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gently fold in the chopped strawberries.
  5. In a small bowl, mix heavy cream and vanilla extract, then pour into the dry ingredients. Stir until just combined.
  6. Turn dough onto a floured surface, shape into a 1-inch thick circle, and cut into 8 wedges.
  7. Place wedges on the prepared baking sheet and bake for 18–22 minutes, until golden brown.
  8. While scones cool, whisk together powdered sugar, lemon juice, and zest for the glaze.
  9. Drizzle glaze over cooled scones and serve.

Notes

For best results, keep butter cold. You can add a little extra lemon zest on top for a stronger citrus flavor. Scones are best enjoyed fresh but can be stored in an airtight container for 1–2 days.
