Ingredients
- For the Cookie Dough
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- For the Cheesecake Filling
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- For the Homemade Strawberry Jam
- 1 cup diced fresh strawberries
- 1/4 cup granulated sugar
- 1 tsp lemon juice
Instructions
- Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Freeze in small dollops for 20 minutes.
- Prepare the homemade jam: Cook strawberries, sugar, and lemon juice in a small saucepan for 8–10 minutes until thickened. Cool completely.
- Cream the butter and sugar: Beat until light and fluffy, then mix in egg, egg yolk, and vanilla.
- Combine dry ingredients: Whisk flour, baking powder, baking soda, and salt. Add to wet mixture to form dough.
- Assemble the cookies: Scoop dough, flatten slightly, add a frozen cheesecake dollop, and wrap dough around it. Add a small indent on top.
- Bake: Preheat oven to 350°F (175°C). Add a spoonful of jam to each indent and bake for 12–14 minutes.
- Cool & Serve: Let cool on the baking sheet for 10 minutes before transferring to a rack. Enjoy warm or chilled!
Notes
Freeze the cheesecake dollops so they stay creamy during baking. The homemade jam can be made ahead and refrigerated for up to 1 week. For extra flavor, add a splash of strawberry extract to the dough. These cookies taste even better the next day!
