  • 1/2 tsp salt
  • For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • For the Homemade Strawberry Jam
  • 1 cup diced fresh strawberries
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice

Instructions

  1. Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Freeze in small dollops for 20 minutes.
  2. Prepare the homemade jam: Cook strawberries, sugar, and lemon juice in a small saucepan for 8–10 minutes until thickened. Cool completely.
  3. Cream the butter and sugar: Beat until light and fluffy, then mix in egg, egg yolk, and vanilla.
  4. Combine dry ingredients: Whisk flour, baking powder, baking soda, and salt. Add to wet mixture to form dough.
  5. Assemble the cookies: Scoop dough, flatten slightly, add a frozen cheesecake dollop, and wrap dough around it. Add a small indent on top.
  6. Bake: Preheat oven to 350°F (175°C). Add a spoonful of jam to each indent and bake for 12–14 minutes.
  7. Cool & Serve: Let cool on the baking sheet for 10 minutes before transferring to a rack. Enjoy warm or chilled!

Notes
