- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/2 cup freeze-dried strawberries, crushed (or fresh strawberries finely chopped)
- Optional: extra granulated sugar for rolling

- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract; mix until combined.
- Gradually add dry ingredients to wet ingredients and mix until just combined.
- Fold in crushed strawberries.
- Roll dough into 1 1/2-inch balls, optionally roll in sugar, and place on prepared baking sheet 2 inches apart.
- Bake 10–12 minutes or until edges are lightly golden. Centers may look slightly soft.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a stronger strawberry flavor, use freeze-dried strawberries. These cookies can be stored in an airtight container for up to 5 days or frozen for later.
