- 1 cup fresh strawberries, sliced
- 1/4 cup fresh basil leaves, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced

- Cook chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper and cook 5–7 minutes per side, or until golden and cooked through (internal temperature 165°F / 74°C). Remove and set aside.
- Make glaze: In the same skillet, add garlic and sauté 30 seconds. Add balsamic vinegar and honey, simmer 1–2 minutes until slightly thickened.
- Add strawberries: Stir in sliced strawberries and cook 1–2 minutes until just softened.
- Combine and finish: Return chicken to skillet and spoon strawberry-balsamic sauce over each piece. Sprinkle with fresh basil before serving.
- Serve: Serve warm over rice, quinoa, or a bed of greens.
Notes
For extra flavor, add a pinch of red pepper flakes or drizzle with a little more balsamic glaze before serving. Leftovers can be stored in the fridge for 1–2 days and reheated gently.
