  • 4 chicken thighs, bone-in and skin-on
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup Guinness stout
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • Fresh parsley, for garnish

  1. Preheat oven to 375°F (190°C).
  2. Season chicken thighs with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté onion and garlic until soft.
  5. Add Guinness, brown sugar, soy sauce, Dijon mustard, and smoked paprika. Stir and bring to a simmer.
  6. Return chicken to skillet, spooning sauce over each piece.
  7. Transfer skillet to oven and bake 25–30 minutes until chicken is cooked through and sauce is sticky.
  8. Garnish with fresh parsley and serve with roasted vegetables or mashed potatoes.

Notes

For an extra sticky glaze, reduce the sauce on the stovetop for a few minutes before adding the chicken to bake. Chicken can also be cooked in a slow cooker for 4–5 hours on low for convenience.
