- 4 chicken thighs, bone-in and skin-on
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup Guinness stout
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- Fresh parsley, for garnish

- Preheat oven to 375°F (190°C).
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft.
- Add Guinness, brown sugar, soy sauce, Dijon mustard, and smoked paprika. Stir and bring to a simmer.
- Return chicken to skillet, spooning sauce over each piece.
- Transfer skillet to oven and bake 25–30 minutes until chicken is cooked through and sauce is sticky.
- Garnish with fresh parsley and serve with roasted vegetables or mashed potatoes.
Notes
For an extra sticky glaze, reduce the sauce on the stovetop for a few minutes before adding the chicken to bake. Chicken can also be cooked in a slow cooker for 4–5 hours on low for convenience.
