- 2 lbs chicken pieces (drumsticks, thighs, or mixed)
- 1/4 cup vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 cup blended tomatoes
- 1/2 cup blended red bell peppers
- 2–3 scotch bonnet or habanero peppers, blended
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp curry powder
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups chicken broth or water
- Fresh parsley or cilantro, for garnish

- Season & brown chicken: Season chicken with salt, pepper, and half the curry powder. Heat oil in a large pot and brown chicken pieces on all sides. Remove and set aside.
- Sauté aromatics: In the same pot, add chopped onion, garlic, and ginger. Cook 3–4 minutes until softened.
- Prepare sauce: Add blended tomatoes, bell peppers, scotch bonnet peppers, and tomato paste. Cook 10–15 minutes until the sauce thickens slightly.
- Season & simmer: Stir in thyme, remaining curry powder, paprika, salt, and pepper. Add chicken back to the pot and pour in chicken broth.
- Cook: Cover and simmer 25–30 minutes until chicken is cooked through and sauce is rich and flavorful.
- Serve: Garnish with fresh parsley or cilantro and serve with rice, yams, or plantains.
Notes
Adjust the heat by reducing the number of scotch bonnet peppers. For a thicker stew, cook uncovered for the last 10 minutes to reduce the sauce.
