Description

This Spicy Nigerian Chicken Stew is rich, flavorful, and perfectly spicy. Made with tender chicken simmered in a vibrant tomato and pepper sauce, it’s a classic West African dish best served with rice, yams, or plantains.

Ingredients

Scale

Ingredients

  • 2 lbs chicken pieces (drumsticks, thighs, or mixed)
  • 1/4 cup vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1/2 cup blended tomatoes
  • 1/2 cup blended red bell peppers
  • 23 scotch bonnet or habanero peppers, blended
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Fresh parsley or cilantro, for garnish

Instructions

Instructions

  1. Season & brown chicken: Season chicken with salt, pepper, and half the curry powder. Heat oil in a large pot and brown chicken pieces on all sides. Remove and set aside.
  2. Sauté aromatics: In the same pot, add chopped onion, garlic, and ginger. Cook 3–4 minutes until softened.
  3. Prepare sauce: Add blended tomatoes, bell peppers, scotch bonnet peppers, and tomato paste. Cook 10–15 minutes until the sauce thickens slightly.
  4. Season & simmer: Stir in thyme, remaining curry powder, paprika, salt, and pepper. Add chicken back to the pot and pour in chicken broth.
  5. Cook: Cover and simmer 25–30 minutes until chicken is cooked through and sauce is rich and flavorful.
  6. Serve: Garnish with fresh parsley or cilantro and serve with rice, yams, or plantains.

Notes

Adjust the heat by reducing the number of scotch bonnet peppers. For a thicker stew, cook uncovered for the last 10 minutes to reduce the sauce.
