- 12 jalapeño peppers, halved and seeded
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 12 slices bacon, cut in half
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Optional: chopped chives or green onions for garnish

- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and pepper until smooth.
- Stuff each jalapeño half with the cheese mixture.
- Wrap each stuffed jalapeño with a half-slice of bacon, securing with a toothpick if needed.
- Place on the prepared baking sheet, spacing evenly.
- Bake for 20–25 minutes until bacon is crispy and cheese is melted.
- Remove from oven, garnish with chopped chives or green onions if desired, and serve warm.
Notes
For extra heat, leave some seeds in the jalapeños. These rolls can also be cooked in an air fryer at 375°F (190°C) for 12–15 minutes.
