- 8–10 egg roll wrappers
- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels (fresh, canned, or frozen)
- 1/2 cup shredded cheddar or pepper jack cheese
- 1/4 cup diced red bell pepper
- 1/4 cup diced green onions
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- Oil for frying or cooking spray for baking
- Optional: salsa, sour cream, or ranch for dipping

- Preheat oven to 400°F (200°C) if baking, or heat oil in a deep fryer or skillet to 350°F (175°C) if frying.
- In a bowl, combine chicken, black beans, corn, cheese, red bell pepper, green onions, chili powder, cumin, salt, and pepper.
- Place 2–3 tablespoons of the filling in the center of each egg roll wrapper. Fold in sides and roll tightly, sealing edges with a dab of water.
- Baking: Place egg rolls on a parchment-lined baking sheet, lightly spray with oil, and bake 18–20 minutes, turning halfway, until golden and crispy.
- Frying: Fry egg rolls in hot oil for 3–4 minutes per side until golden brown. Drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
Make sure not to overfill the wrappers to prevent them from bursting. You can prepare them ahead and freeze uncooked egg rolls for later.
