Description
Soft, fluffy pumpkin cookies topped with a sweet cinnamon frosting — perfect for fall gatherings or holiday treats.

- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup canned pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- For the frosting: 1 cup powdered sugar, 2 tbsp butter, softened, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1–2 tsp milk as needed
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, oil, granulated sugar, and brown sugar until smooth.
- Add pumpkin puree, egg, and vanilla extract; mix until combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually mix dry ingredients into wet ingredients to form a soft dough.
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.
- For frosting, beat powdered sugar, butter, vanilla, and cinnamon together, adding milk 1 tsp at a time until desired consistency. Spread over cooled cookies.
Notes
Optional: sprinkle extra cinnamon on top of frosting for added flavor. Store in an airtight container for up to 3 days.
