  • 1/2 cup canned pumpkin puree
  • 1 large egg

  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • For the frosting: 1 cup powdered sugar, 2 tbsp butter, softened, 1 tsp vanilla extract, 1/2 tsp ground cinnamon, 1–2 tsp milk as needed

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, oil, granulated sugar, and brown sugar until smooth.
  3. Add pumpkin puree, egg, and vanilla extract; mix until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually mix dry ingredients into wet ingredients to form a soft dough.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10–12 minutes until edges are lightly golden. Cool on baking sheet for 5 minutes, then transfer to wire rack.
  8. For frosting, beat powdered sugar, butter, vanilla, and cinnamon together, adding milk 1 tsp at a time until desired consistency. Spread over cooled cookies.

Notes

Optional: sprinkle extra cinnamon on top of frosting for added flavor. Store in an airtight container for up to 3 days.
