These Soft Gingerbread Cookies are perfectly tender, spiced just right, and topped with a sweet maple glaze. Soft in the center with lightly crisp edges, they’re a festive favorite perfect for the holidays or cozy cookie cravings!

- For the Cookies
- 3 cups all-purpose flour
- 1 1/2 tsp baking soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 tsp vanilla extract
- For the Maple Glaze
- 1 cup powdered sugar
- 2–3 tbsp pure maple syrup
- 1–2 tsp milk (optional, for thinning)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in egg, molasses, and vanilla until smooth.
- Gradually mix in dry ingredients until a soft dough forms.
- Roll dough into 1–2 tbsp balls and place 2 inches apart on baking sheets. Flatten slightly if desired.
- Bake 8–10 minutes, until edges are set but centers remain soft.
- Cool completely on a wire rack.
- For the glaze, whisk powdered sugar with maple syrup (and milk if needed) until smooth. Drizzle over cooled cookies.
Notes
For extra festive flair, sprinkle a little cinnamon sugar on top before baking. Store in an airtight container for up to 1 week.
