These Soft Cut Out Sugar Cookies are thick, tender, and perfect for decorating. They hold their shape beautifully without spreading and stay soft for days.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 2 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2–3 tbsp milk (only if needed for softness)

- In a large bowl, cream together the butter and sugar until light and fluffy.
- Mix in the egg, vanilla extract, and almond extract.
- In a separate bowl, whisk the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture. If the dough seems too dry, add 1 tablespoon of milk at a time.
- Divide the dough into two discs, wrap in plastic, and chill for 1 hour.
- Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
- Roll out dough to 1/4 inch thickness. Cut shapes using cookie cutters.
- Place cookies on the baking sheet and bake for 8–10 minutes, or until edges are just barely golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Decorate once completely cooled.
Notes
Chill the cookies after cutting shapes for 10 minutes before baking for perfect edges. For extra softness, roll slightly thicker and avoid overbaking.
