  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 23 tbsp milk (only if needed for softness)

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Mix in the egg, vanilla extract, and almond extract.
  3. In a separate bowl, whisk the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture. If the dough seems too dry, add 1 tablespoon of milk at a time.
  5. Divide the dough into two discs, wrap in plastic, and chill for 1 hour.
  6. Preheat oven to 350°F (180°C). Line baking sheets with parchment paper.
  7. Roll out dough to 1/4 inch thickness. Cut shapes using cookie cutters.
  8. Place cookies on the baking sheet and bake for 8–10 minutes, or until edges are just barely golden.
  9. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Decorate once completely cooled.

Notes

Chill the cookies after cutting shapes for 10 minutes before baking for perfect edges. For extra softness, roll slightly thicker and avoid overbaking.
