  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Extra sugar for rolling (optional)
  • Optional Mix-ins
  • Chocolate chips
  • Chopped peanuts
  • White chocolate chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Add dry ingredients to the peanut butter mixture and stir until a soft dough forms.
  6. Roll dough into tablespoon-sized balls. If desired, roll in sugar for a sparkly finish.
  7. Place on baking sheet and gently press with a fork to create a crosshatch pattern.
  8. Bake for 9–11 minutes, until edges are set but centers appear soft.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra softness, slightly underbake the cookies and allow them to finish setting on the sheet. Add chocolate chips for a peanut butter cup twist or chill the dough 30 minutes for thicker cookies. Store in an airtight container for up to 1 week!
