- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Additional granulated sugar (for rolling)
- 24–30 chocolate kisses, unwrapped
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in peanut butter, egg, and vanilla until smooth.
- In a separate bowl, whisk flour, baking soda, baking powder, and salt.
- Add dry ingredients to the wet mixture and stir until a soft dough forms.
- Roll dough into 1-inch balls and coat each one in granulated sugar.
- Place on the baking sheet and bake 8–10 minutes until lightly golden.
- Immediately press a chocolate kiss into the center of each warm cookie.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
For the softest cookies, avoid overbaking—remove them when edges are just set. If the chocolate kisses get too soft after pressing them in, briefly refrigerate the cookies to help them firm. Store in an airtight container for up to 5 days or freeze for up to 2 months.
