- 2 1/4 cups all-purpose flour
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 tsp baking soda
- 1/4 tsp salt
- Wet Ingredients
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 2 tsp vanilla extract
- For Rolling
- 1/3 cup granulated sugar (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
- In a large bowl, cream butter and brown sugar until light and fluffy, 2–3 minutes.
- Mix in the egg, molasses, and vanilla until fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Roll dough into 1–2 tablespoon–sized balls. Roll each ball in granulated sugar if desired.
- Place on baking sheets, spacing at least 2 inches apart.
- Bake 8–10 minutes, until the edges are set but the centers still look soft and slightly puffy.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For extra-soft cookies, remove them from the oven while the centers still look slightly underbaked—they firm up as they cool. Rolling in sugar adds sparkle and a lightly crisp exterior. Store in an airtight container to keep them chewy for days!
