  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 2 tsp vanilla extract

  • 1/3 cup granulated sugar (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  3. In a large bowl, cream butter and brown sugar until light and fluffy, 2–3 minutes.
  4. Mix in the egg, molasses, and vanilla until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Roll dough into 1–2 tablespoon–sized balls. Roll each ball in granulated sugar if desired.
  7. Place on baking sheets, spacing at least 2 inches apart.
  8. Bake 8–10 minutes, until the edges are set but the centers still look soft and slightly puffy.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra-soft cookies, remove them from the oven while the centers still look slightly underbaked—they firm up as they cool. Rolling in sugar adds sparkle and a lightly crisp exterior. Store in an airtight container to keep them chewy for days!
