  • 1 large egg
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder

  • 1/2 tsp salt
  • Cinnamon Roll Filling
  • 1/3 cup softened butter
  • 1/2 cup brown sugar, packed
  • 1 tbsp cinnamon
  • Vanilla Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter and granulated sugar until light and fluffy, about 2–3 minutes.
  3. Add the egg and vanilla extract; mix until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet ingredients until a soft dough forms.
  6. In a small bowl, mix softened butter, brown sugar, and cinnamon to make the filling.
  7. Roll out portions of dough into thick logs or discs and spoon cinnamon filling over the top. Swirl gently with a knife.
  8. Scoop or roll dough into balls and slightly flatten on the baking sheet.
  9. Bake 10–12 minutes, until the edges are set but centers still look soft.
  10. Whisk glaze ingredients together and drizzle over cooled cookies.

Notes

For extra cinnamon roll flavor, add a touch of cream cheese to the glaze. Chill the dough 20–30 minutes for thicker cookies. Do not overbake—these cookies stay soft and chewy if removed while the centers still look slightly underdone!
