Ingredients

- 1 Β½ cups raw pumpkin seeds (cleaned)
- 2 cups water (for soaking)
- 1 tbsp olive oil or melted butter
- Β½ tsp salt (or to taste)
- Optional: ΒΌ tsp garlic powder, smoked paprika, or cinnamon sugar
Instructions
- Soak pumpkin seeds in 2 cups of water for at least 4 hours or overnight.
- Drain and pat seeds completely dry with a towel.
- Preheat oven to 325Β°F (160Β°C) and line a baking sheet with parchment paper.
- Toss seeds with olive oil, salt, and any optional seasonings.
- Spread seeds in a single layer on the baking sheet.
- Roast for 25β30 minutes, stirring halfway through, until golden and crispy.
- Allow seeds to cool completely before serving or storing in an airtight container.
