- 1 lb ground beef (80/20)
- 4 large flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 1 small onion, thinly sliced
- 1 small bell pepper, thinly sliced
- 1 tbsp vegetable oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Salsa, sour cream, or guacamole for serving

- Prepare the vegetables: Heat oil in a skillet over medium heat. Sauté onion and bell pepper until soft, about 5 minutes. Remove and set aside.
- Cook the beef: Divide beef into 4 portions. In the same skillet, smash each portion into a thin patty. Sprinkle with smoked paprika, garlic powder, salt, and pepper. Cook 2-3 minutes per side until browned and cooked through.
- Assemble quesadillas: Place a tortilla on a clean skillet over medium heat. Sprinkle half of the cheese, add cooked beef patty, sautéed veggies, then top with remaining cheese and another tortilla.
- Cook 2-3 minutes per side until golden and cheese is melted. Press lightly with spatula to seal.
- Slice into wedges and serve with salsa, sour cream, or guacamole.
Notes
For extra flavor, add sliced jalapeños or a dash of hot sauce inside. Use a cast-iron skillet for crispier quesadillas.
