- 2 lbs boneless, skinless chicken thighs
- 4 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup dry white wine
- 1 cup chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup heavy cream or half-and-half
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish

- Add white wine, chicken broth, thyme, rosemary, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
- If desired, stir in cornstarch slurry and cook 15 minutes more to thicken.
- Stir in heavy cream just before serving for a creamy finish.
- Garnish with parsley and serve warm over rice or mashed potatoes.
Notes
Use chicken breast if preferred, but thighs are more tender. Add peas or mushrooms for extra vegetables.
