- 1 1/2 lb flank steak, thinly sliced against the grain
- 1/4 cup cornstarch
- 2 tbsp vegetable oil
- 1/2 cup low-sodium soy sauce
- 1/2 cup brown sugar, packed
- 3–4 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp crushed red pepper flakes (optional)
- 2–3 green onions, sliced (for garnish)
- Cooked rice or noodles, for serving

- Coat the sliced flank steak in cornstarch, shaking off excess.
- In a skillet, heat vegetable oil over medium-high heat and sear the beef for 1-2 minutes per side until lightly browned. Transfer to the slow cooker.
- In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and red pepper flakes. Pour over the beef in the slow cooker.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours until beef is tender.
- If the sauce is too thin, remove beef and thicken sauce in a saucepan with a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) over medium heat, then return beef to sauce.
- Garnish with sliced green onions and serve over rice or noodles.
Notes
For extra flavor, sear the beef in batches to avoid overcrowding. You can adjust sugar to taste for a sweeter or less sweet sauce.
