- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 2 tbsp olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and black pepper to taste
- Optional: fresh parsley for garnish

- Add rice and chicken broth to the bottom.
- Place chicken breasts on top of the rice.
- In a small bowl, mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, parsley, paprika, salt, and pepper.
- Pour the lemon herb mixture evenly over the chicken.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Fluff rice and gently stir before serving.
- Garnish with fresh parsley and serve warm.
Notes
Chicken thighs can be used instead of breasts for a juicier result. Add vegetables like carrots or spinach during the last 30 minutes for extra nutrition.
