- 1½ lbs boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice (uncooked)
- 2½ cups low-sodium chicken broth
- 2 tbsp olive oil
- Zest and juice of 1 large lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- ¼ cup chopped fresh parsley (optional)

- Lightly grease the slow cooker with olive oil.
- Add uncooked rice evenly to the bottom of the slow cooker.
- Pour in chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper. Stir gently.
- Place chicken on top of the rice mixture and drizzle with olive oil.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender and rice is fully cooked.
- Remove chicken, shred or slice if desired, then return to the slow cooker.
- Gently fluff the rice, garnish with fresh parsley, and serve warm.

💡 Tip: For extra brightness, add a squeeze of fresh lemon juice just before serving. Brown rice can be used, but will require extra broth and longer cook time.
