  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish

  1. Prepare slow cooker: Lightly grease the slow cooker with olive oil or non-stick spray.
  2. Layer ingredients: Place chicken breasts at the bottom. Sprinkle garlic, thyme, rosemary, salt, and pepper over the chicken. Add rice around the chicken, pour chicken broth and lemon juice over everything. Add lemon zest on top.
  3. Cook: Cover and cook on low for 4–5 hours or on high for 2–3 hours until chicken is cooked through and rice is tender.
  4. Add peas: About 15 minutes before serving, stir in frozen peas if using.
  5. Serve: Fluff rice, slice chicken if desired, garnish with fresh parsley, and serve warm.

Notes

For extra flavor, sear the chicken briefly in a skillet before placing it in the slow cooker. You can also add other vegetables such as carrots or bell peppers for a heartier meal.
