This Slow Cooker Lemon Herb Chicken and Rice is bright, cozy, and incredibly easy! Tender chicken, fluffy rice, fresh lemon, garlic, and herbs come together in a comforting one-pot meal that practically cooks itself. Ingredients

- 1 1/2 lbs boneless skinless chicken breasts or thighs
- 1 1/2 cups long-grain white rice (uncooked)
- 3 cups chicken broth
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt & pepper, to taste
- 2 tbsp butter
- Fresh parsley or lemon slices, for garnish
Instructions
- Lightly grease your slow cooker with nonstick spray.
- Place the chicken in the bottom of the slow cooker and season with salt, pepper, paprika, thyme, basil, and parsley.
- Add the diced onion and garlic on top.
- Stir together the chicken broth, lemon juice, and lemon zest. Pour over the chicken.
- Cover and cook on HIGH for 2 1/2β3 hours or LOW for 5β6 hours.
- Remove the chicken, shred or slice it, and stir the uncooked rice into the broth in the slow cooker.
- Return the chicken on top of the rice and add the butter.
- Cover and cook for an additional 25β35 minutes, or until the rice is tender.
- Fluff the rice, garnish with fresh parsley or lemon slices, and serve warm!
Notes
π‘ Tip: For extra creaminess, stir in a splash of heavy cream or a handful of shredded Parmesan at the end. You can also add spinach, peas, or carrots for a veggie boost!
