Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 1 1/2 cups long-grain white rice (uncooked)
  • 3 cups chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • 2 tbsp butter
  • Fresh parsley or lemon slices, for garnish

Instructions

  1. Lightly grease your slow cooker with nonstick spray.
  2. Place the chicken in the bottom of the slow cooker and season with salt, pepper, paprika, thyme, basil, and parsley.
  3. Add the diced onion and garlic on top.
  4. Stir together the chicken broth, lemon juice, and lemon zest. Pour over the chicken.
  5. Cover and cook on HIGH for 2 1/2–3 hours or LOW for 5–6 hours.
  6. Remove the chicken, shred or slice it, and stir the uncooked rice into the broth in the slow cooker.
  7. Return the chicken on top of the rice and add the butter.
  8. Cover and cook for an additional 25–35 minutes, or until the rice is tender.
  9. Fluff the rice, garnish with fresh parsley or lemon slices, and serve warm!

Notes

πŸ’‘ Tip: For extra creaminess, stir in a splash of heavy cream or a handful of shredded Parmesan at the end. You can also add spinach, peas, or carrots for a veggie boost!
