- 2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup honey
- 1/2 cup Dijon mustard
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish

- Place chicken in the slow cooker.
- In a small bowl, whisk together honey, Dijon mustard, mayonnaise, apple cider vinegar, garlic powder, paprika, salt, and pepper.
- Pour sauce over the chicken and gently stir to coat.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender and fully cooked.
- Garnish with fresh parsley before serving.
- Serve with rice, potatoes, or vegetables.
Notes
For a thicker sauce, remove the chicken and simmer the sauce in a small pan for 5 minutes before serving. This dish can also be shredded for sandwiches or wraps.
