- 2.5 lbs beef chuck roast, cut into chunks
- 6 tbsp unsalted butter
- 5 cloves garlic, minced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish

- Place beef chunks into the slow cooker.
- Add garlic, butter, Italian seasoning, salt, and pepper.
- Pour beef broth and Worcestershire sauce over the beef.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is fork-tender.
- If desired, stir in cornstarch slurry and cook an additional 15 minutes to thicken the sauce.
- Garnish with parsley and serve warm.
Notes
Add baby potatoes or carrots for a complete one-pot meal. For extra garlic flavor, roast the garlic before adding it to the crockpot.
