- 1 oz ranch seasoning mix (1 packet)
- 8 oz cream cheese, cubed
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions (optional, for garnish)
- Salt and pepper to taste
- Buns, tortillas, or rice (for serving)
Instructions
- Layer ingredients: Place chicken breasts in the bottom of the slow cooker. Sprinkle with ranch seasoning and top with cubed cream cheese.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked and tender.
- Shred chicken: Shred the chicken directly in the slow cooker using two forks.
- Add cheese & bacon: Stir in shredded cheddar cheese and bacon. Let melt for 5–10 minutes on warm.
- Serve: Top with chopped green onions and serve on buns, in wraps, or over rice, potatoes, or steamed veggies.
Notes
To lighten it up, use reduced-fat cream cheese and skip the bacon. This dish is great for meal prep and can be stored in the fridge for up to 4 days or frozen.
