- 2 lbs potatoes, peeled and diced
- 1 lb ground beef or sausage
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Chopped green onions for garnish

- In a skillet, cook ground beef or sausage with onion and garlic until browned; drain excess fat.
- In a bowl, combine potatoes, cooked meat mixture, cheddar cheese (reserve a little for topping), sour cream, milk, paprika, salt, and pepper.
- Transfer mixture to the slow cooker and spread evenly.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
- Sprinkle reserved cheddar cheese on top 10–15 minutes before serving and allow to melt.
- Garnish with chopped green onions and serve warm.
Notes
For extra flavor, add cooked bacon or bell peppers. You can also use a mix of cheddar and Monterey Jack cheese for a creamier texture.
