- 1½ lbs ground beef
- 1 small onion, diced
- 3 cups frozen diced hash brown potatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can Rotel tomatoes with green chilies
- 1 (10.5 oz) can cream of mushroom or cream of chicken soup
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups shredded cheddar cheese
- Optional garnish: green onions or fresh parsley

- Brown ground beef with diced onion in a skillet over medium heat; drain excess grease.
- Add cooked beef to the slow cooker.
- Add hash browns, black beans, corn, Rotel tomatoes, soup, and seasonings.
- Stir until well combined.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
- Sprinkle shredded cheese over the top during the last 20 minutes.
- Cover and cook until cheese is melted.
- Garnish and serve hot.
