  • lbs ground beef
  • 1 small onion, diced
  • 3 cups frozen diced hash brown potatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can Rotel tomatoes with green chilies
  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups shredded cheddar cheese
  • Optional garnish: green onions or fresh parsley

  1. Brown ground beef with diced onion in a skillet over medium heat; drain excess grease.
  2. Add cooked beef to the slow cooker.
  3. Add hash browns, black beans, corn, Rotel tomatoes, soup, and seasonings.
  4. Stir until well combined.
  5. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  6. Sprinkle shredded cheese over the top during the last 20 minutes.
  7. Cover and cook until cheese is melted.
  8. Garnish and serve hot.

Notes

🤠 Tip: Swap ground beef for ground turkey or sausage for variety. This casserole is great served with cornbread or a simple green salad.
