- 1 lb ground beef
- 1 small onion, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup BBQ sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Optional toppings: sour cream, chopped green onions, additional cheese

- In a skillet over medium heat, cook ground beef with onion until beef is browned and onion is soft. Drain excess fat.
- Transfer beef mixture to the slow cooker.
- Add black beans, corn, diced tomatoes, BBQ sauce, salt, pepper, paprika, and garlic powder. Stir to combine.
- Cover and cook on Low for 4–6 hours or on High for 2–3 hours.
- About 15 minutes before serving, stir in 1/2 cup shredded cheddar cheese.
- Serve warm, topped with optional sour cream, green onions, or extra cheese if desired.
Notes
For a spicier version, add a diced jalapeño or a pinch of cayenne pepper. Serve with cornbread or over rice for a complete meal.
