- 1 1/2 lbs ground beef
- 4 cups diced potatoes
- 1 cup corn (frozen or canned, drained)
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup shredded cheddar cheese
- Fresh parsley for garnish

- Brown ground beef in a skillet and drain excess grease.
- Add beef, potatoes, corn, beans, onion, and garlic to the slow cooker.
- In a bowl, whisk cream of mushroom soup, milk, paprika, salt, and pepper.
- Pour mixture over ingredients and stir gently.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Sprinkle cheese on top during the last 20 minutes.
- Garnish with parsley and serve warm.
Notes
You can substitute ground turkey for beef or add jalapeños for a spicy kick. Serve with cornbread or a side salad.
