- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
- 3 carrots, peeled and chopped
- 3 potatoes, peeled and cubed
- 2 celery stalks, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp cornstarch + 2 tbsp water (optional, to thicken)
- Fresh parsley, chopped (for garnish)
Instructions
- Prep ingredients: Add chicken, carrots, potatoes, celery, onion, garlic, and tomato paste to the slow cooker.
- Season and add broth: Sprinkle in thyme, rosemary, paprika, salt, and pepper. Pour in chicken broth and stir gently.
- Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and vegetables are soft.
- Thicken (optional): Mix cornstarch and water in a small bowl, stir into the stew, and cook uncovered for another 20–30 minutes to thicken.
- Serve: Ladle into bowls and garnish with chopped parsley. Serve with crusty bread if desired.
Notes
For a creamier stew, stir in 1/2 cup of heavy cream or coconut milk at the end. Leftovers store well and taste even better the next day.
