- 1 1/2 lbs boneless, skinless chicken breasts (or thighs)
- 8 cups low-sodium chicken broth
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp dried rosemary
- 1 tsp salt (to taste)
- 1/2 tsp black pepper
- 2 cups egg noodles (added at the end)
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken, carrots, celery, onion, garlic, broth, bay leaf, thyme, parsley, rosemary, salt, and pepper into the slow cooker. Stir well.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender and vegetables are cooked.
- Remove the chicken, shred with two forks, then return to the slow cooker.
- Add egg noodles and cook for another 20–30 minutes on HIGH until noodles are tender.
- Remove bay leaf, adjust seasoning, and serve hot.
- Garnish with fresh parsley before serving.
Notes
For richer flavor, sauté the onions, carrots, and celery in olive oil before adding them to the slow cooker. You can also use whole chicken pieces for a more traditional broth.
