- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
- 8 oz smoked sausage, sliced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 1/2 cups long-grain rice, uncooked
- 2 tsp Cajun seasoning
- 1 tsp smoked paprika
- 1/2 tsp thyme
- Salt and pepper to taste
- Optional garnish: chopped parsley or green onions

- Place chicken, sausage, bell peppers, onion, and garlic into the slow cooker.
- Add diced tomatoes, chicken broth, Cajun seasoning, smoked paprika, thyme, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- About 30–40 minutes before serving, stir in uncooked rice.
- Cover and continue cooking until rice is tender and liquid is absorbed.
- Garnish with chopped parsley or green onions and serve hot.
Notes
You can substitute shrimp for the chicken for a seafood version. Adjust Cajun seasoning for desired spice level.
