- 1 lb dried red kidney beans, soaked overnight and drained
- 1 lb andouille sausage or smoked sausage, sliced
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp paprika
- 1 tsp Cajun seasoning
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1 bay leaf
- Cooked white rice for serving
- Green onions for garnish

- Add beans, sausage, onion, bell pepper, celery, garlic, paprika, Cajun seasoning, thyme, pepper, and bay leaf to the slow cooker.
- Pour chicken broth over all ingredients and stir.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beans are tender.
- Remove bay leaf and lightly mash some beans for a creamier texture.
- Taste and adjust seasoning with salt if needed.
- Serve over cooked rice and garnish with green onions.
Notes
For a spicier version, add cayenne pepper or hot sauce. You can substitute canned beans (drained) and reduce cook time to 3–4 hours on LOW.
