- 2 lbs beef chuck roast, sliced into strips
- 6 cups beef broth
- 3 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tsp grated ginger
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 1 cup sliced bok choy or spinach
- 3 packs ramen noodles (seasoning packets discarded)
- Green onions and sesame seeds for garnish

- Place beef strips, garlic, ginger, mushrooms, and carrots into the slow cooker.
- In a bowl, whisk beef broth, soy sauce, hoisin sauce, and brown sugar.
- Pour mixture over the beef.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
- Stir in bok choy or spinach.
- Add ramen noodles, cover, and cook on HIGH for 15–20 minutes until noodles are tender.
- Serve hot garnished with green onions and sesame seeds.
Notes
For extra heat, add chili garlic sauce or sriracha. You can substitute rice noodles or udon if preferred.
